I know that several companies manufacture very high quality diagonals such as televue, astro-physic and baader.
Which one would you choose and why?
It could be another manufacturer that I don't know.

The Stellarvue deluxe is a excellent diagonal and is usually a bit cheaper than the others you listed. The specification compared to the Astro-Physics are identical other than the Stellarvue having a external collimation system
The only difference I have found after using the Astro-Physics and BBHS Baader, is that reds are presented a bit brighter with the Baader, subtle but there.
Scatter is well controlled with both and since that was the only difference I stayed with the Astro-Physics.
The Stellarvue is right there with the Astro-Physics and I use these 2 the most when using mirrors.
The i-Star and TAL are also top tier diagonals but you would have to look on the used market for those.

I am not a TeleVue fan and had a bad experience with the very first mirror diagonal I purchased from them.

Over the years I had many diagonals from several vendors but at the end most got upgraded to Baader. Baader's optical and mechanical quality is hard to beat.

Saying that they are not the only ones making quality diagonals. I don't have experience with Astro-Physics or Stellarvue diagonals, but if you are in the market for a prism, I can highly recommend
